Recipe of the week: Chicken Casserole

Creamy, rich & delicious are the words I have for this yummy dinner! My mom has been making this casserole for as long as I can remember and it has always been my favorite. From start to finish it takes about 20-25 minutes. So simple yet so tasty. If you need an easy meal that you can throw together on a busy week night, then you have come to the right place. The recipe I am posting serves about 4 but you could certainly double this recipe and it would be just as tasty!

What you'll need:
1 sleeve of Ritz crackers
1 boneless skinless chicken breast cooked and cut into bite size pieces(or you could use canned chicken if you're REALLY short on time)
1 can cream of chicken
1 can vegall
1/4 cup sour cream
1 can campbells double(or curly) noodle

What you do:
Preheat oven to 350. Mix cream of chicken, vegall, chicken, sour cream and noodles together in a bowl until combined. Pour into a baking dish. Crush up Ritz crackers & spread over casserole. Melt a little bit of butter to pour over the crackers.


I always serve this with some kind of bread. Usually yeast rolls or monkey bread! Enjoy!

This was such a fun shoot! We met in downtown La Porte to shoot and battled thru the massive amounts of mosquitoes to get some cute shots! Amy, the momma, I have known her as well as her parents for about 8 years or so. They are such a special family to me and my family. We had a lot of fun shooting these, not to mention how photogenic all of them are. I hope you enjoy!!

Recipe of the week: Granny Taylor's Pecan Pie

This pie was my Granny Taylor's recipe. She was very special to me and my mom. She was my moms grandmother and she died whenever I was about 7 or so. I only knew her a short period of time but I was very close to her. I have to say that I don't like any other pecan pie that I've tried other than this one. It's so yummy! I hope you'll try it!



What you need:
3 eggs slightly beaten
1 cup Karo syrup
1 cup sugar
2 tablespoons margarine
1 teaspoon vanilla
1 1/2 cups chopped or whole pecans(i chop mine)
1 homemade (or you can use store bought) 9 inch piecrust.

What you do:
In large bowl combine & stir together first 5 ingredients until incorporated. Stir in nuts if you chopped them, if you prefer them whole then arrange them on the bottom of piecrust in single layer. Pour mixture into crust. Bake at 350 for 50-55 minutes. Let it cool completely. Serves 8.

Grill it!: Jalapeno & Parmesan Burgers

My husband is THE best griller I know. He might not agree with that but I personally think that. He loves to create his own recipes and 9 times out of 10 it's absolutely delicious. However, there was this one time that he decided to marinate steak in Jack Daniels and it was AWFUL! Ha! We laugh about it often.

One of my favorite things that he makes is his Parmesan Spinach stuffed Chicken. Oh. My. Word. I would have it weekly if I could. I will be posting that recipe in a few weeks for you all to try and TRUST ME... You will fall in love too. I also love burgers. I have at least three a week. Now that I say that out loud, it's kind of embarrassing. But I am my fathers daughter and I looooove a good hamburger. You're probably wondering "Where is she going with this?" Well, let me tell you... I was watching Diners, Drive-Ins & Dives the other day and they had a burger on there that had spinach on it. So it got me thinking about the chicken that I mentioned earlier and thats when it happened... The light bulb came on... "Why not make a burger version of that chicken?" So we tried it tonight and WOW... It was delicious! I just couldn't wait to share this recipe with all of you so here it is.

What you'll need:
1 Jalapeno
1 lb of hamburger meat
Fresh baby spinach leaves
1/2 Cup shredded Parmesan cheese
1 1/2 Teaspoons each Salt & Pepper
2 Teaspoons each Onion salt & Garlic powder
1 Teaspoon Parsley Flakes

What you do:
Mince up your Jalapeno.

Mix the meat, jalapeno, salt, pepper, onion salt and garlic powder all together. Separate into even patties. One pound of meat makes about 3 patties.

Throw them on the grill over high heat for about 7 minutes of each side. Put the spinach on the patties for the last 5 minutes of cooking and close the grill so that it wilts.

All we added was mayo to the buns.

So. Delicious.

Recipe of the Week: Zucchini Pasta

I love to cook. My style of cooking is definitely Southern. It's rare that we have a meal that there's not something fried. That's the way me & my husband grew up eating. I love when you eat a meal and it takes you back to a place in your life and you can relive memories thru the food. I know for me that when I make my moms spaghetti it takes me back to when the Branson's would come stay at our house for a week or two and we would make a big pot of spaghetti, eat and laugh until late at night. When I make my mother in law's chicken tacos it takes me back to when me and my husband, Jeremy were dating and I made it and surprised him when he got home from work. I love that feeling of comfort you get from different dishes. 

Most of the recipes that I make are ones that have been passed down thru my family and husbands family. I also love creating my own dishes. A lot of times what I will do is find a dish in a magazine or online and put a spin on it... Make it my own. I like to have fun with my food and experiment with it. 

While my style might be Southern and we sure do love our fried foods here at the Floyd household, I do occasionally like to make something healthy. The dish I am featuring this week is tasty, filling and healthy! I found this recipe in a magazine and fell in love with it. I made a few modifications to it... I added chicken because my husband is a firm believer in "meat at every meal." You could certainty leave the chicken out if you desire though.

Zucchini Pasta

What you'll need:
Penne Pasta
2 cups cooked Chicken
1/4 Cup Extra-Virgin Olive Oil
2 medium Zuchinni halved lengthwise, cut into half moons
2 Large Garlic Cloves, minced
2 Teaspoons Lemon Zest
1/4 Cup Parmigiano Reggiano
3 Tablespoons Chopped Fresh Basil
3 Tablespoons Chopped Fresh Flat Leaf Parsley
Salt & Pepper to taste

What you do:
Saute zuchinni in olive oil over medium-high heat in large skillet until brown & tender. Add garlic and cook until fragrant (about 2 minutes).Remove from heat, stir in lemon zest, salt & pepper. Reserve 1/2 cup of pasta water and drain pasta. Add zuchinni mixture to pasta along with Parmigiano Reggiano, basil & parsley. Season to taste with salt & pepper. Toss to combine adding pasta water if necessary to moisten pasta.

I served with "The Bread" from Pioneer Woman's website. You should go check that out. It's so easy but some of the best bread I've ever had.

Hi friends! I had over 150 views from my blog launch yesterday!! I am so excited for this blog! Thank you for checking it out and I hope that you will continue to follow my posts.

Today, I am posting some of my photos for you all of you to see some of my work. I took my website down after I got married because I changed the name of my photog business and just never got around to getting another one up. This will be my place to post sessions and such!

I specialize in family, kids, senior, portraits, baby & maternity photography. I have done a few weddings and absolutely love shooting them but I would have to say that my passion is capturing those 6 listed above. There's just something about giving someone a disc full of images of their loved ones that you know they will cherish for years to come.
